When a connection gets deleted, does all the related data get removed as well?

When a connection is deleted, we remove all the stored credentials & settings for the consumer.
We never store any data (like employees, contacts,...) that is collected from the consumer. We forward all consumer data directly from the API of the integration, without storing the data.
